Maybe you’ve heard the notion that Asians and Asian Americans don’t like overly sweet desserts and that “not too sweet” is the ultimate compliment.
Well, it’s true.
I really got into baking in college to avoid studying — as one does.
And I remember I had a friend in particular who didn’t like sweets period, but she always liked mine because I reduced the sugar in everything I made.
Over the years, I started to get a grasp as to what each ingredient did and which recipes would suit my friends and family’s tastes.
Then one Christmas, I decided to bake chunky cookies and give them to friends. A couple of months later, I was sending some more to cousins across the country when an instructor of mine coincidentally asked about buying some and refused to just take them.
That’s pretty much all it took. I was lucky enough to get into the La Plata Farmers Market after a few months of operation and I’ve been there since!
In the beginning I fell into a rabbit hole of obsession. I scrutinized every ingredient to see if it would improve my recipe, studied other recipes to see why they chose that ratio, and baked lots of chipless cookies to make sure the add-ins weren’t masking a flavorless dough.
I’ve learned how to modify and turn a brown sugar cookie dough into chocolate, lemon, red velvet — you name it!
